Manny Pacquiao triumphs once again

Manny "The Pacman" Pacquiao makes the Filipinos all over the world proud once again as he won the fight against the Mexican fighter "Dangerous" David Diaz last Saturday, June 28th at the Mandalay Bay Resort and Casino in Las Vegas, Nevada. The undisputable 9th round KO victory of Pacquiao over Diaz made him the new WBC Lightweight Champion. I've watched the fight on an internet full streaming video and I feel so proud of his victory. I've seen the news on tv which showed thousands of Filipinos united all over the world hoping for Pacquiao to win. This may sound funny but it's been reported that there has been no recorded criminal incident from 8:00 AM to 3:00 PM on the day of the fight. Apparently, even criminals stayed glued to radio and television sets to watch the big event. Anyway, big congratulations to Manny Pacquiao for being the 1st Asian boxing champion to win 4 world titles in 4 separate weight divisions.

Marian Rivera is FHM's Sexiest Pinay for 2008

It's official. FHM Philippines released the final tally of votes and it was confirmed that the Dyesebel star, Ms. Marian Rivera is indeed the sexiest Pinay for 2008 according to the annual poll done by FHM. Marian Rivera got 316,135 votes via text and online voting clinching her at the first place, Katrina Halili landed on the 2nd spot with her 123,239 votes and Angel Locsin came in third with her 121,388 votes. It is interesting to know that among the women vying for the top spot, only Marian Rivera hasn't been a covergirl for FHM. She was once offered to pose as a covergirl but was not ready for it at that time. But in her prior TV interviews, Marian Rivera expressed an interest to grace the cover of the best-selling men's magazine in the country if she would become #1 in the poll results.

A Date to Remember


Two years ago on June 26th, I went to Mactan Int'l Airport with my cousin, Libby to meet my Jeff in person. I can vividly remember how I felt on that day. I was happy, excited, nervous, very conscious of how I look, and worried when it seemed like everyone else have gone out and still I didn't see the tall, Caucasian, red-head guy of my dreams from the exit door. Imagine what it would be like to feel all of those feelings at the same time. I thought that I needed to go to the restroom but didn't want to do it 'coz I don't want to miss him when he comes out to meet me.

As I look back on those 2 weeks of his first visit, I realize how lucky I am to have spent that two weeks of my life with the wonderful man that I chose to marry. It was filled with wonderful memories, fantastic dates, sweet moments and memorable places that we visited together. And to celebrate the 2nd anniversary of that first meeting, Jeff took me out to a Thai restaurant last night. A cone of twist vanilla and chocolate ice-cream each was our dessert as he drove us to a pretty park in front of a serene creek with a flock of geese as our company. I enjoyed spending last night with him reminiscing our first dates back in the Philippines.

Lechon Manok for Dinner


One of my friends from my Multiply network shared a recipe for lechon manok. I wanted to try it out myself and last night, I got an inspiration to cook it. It's not that hard to prepare but it's really gonna take some kind of labor of love especially the marinade part. I enjoyed doing it though. I feel proud of myself because I've never really cooked real meals while I was still in PI but now I can cook meals for me and hubby and find pleasure in it.

Anyway, included below is the recipe for those of you who might wanna try it as well. It was so yummy that I ate so much last night. It makes me wonder if there could be some effect to my 40-minute treadmill yesterday since I cave in to my cravings of lechon manok right after. (hehe)

Ingredients:
1 whole chicken
3 tablespoons of brown or white sugar
1 cup soy sauce
1 head garlic, minced
1 onion,chopped
ginger root
3 tablespoons of calamansi juice or lemon juice
1/2 cup of sprite, 7up
2 cups of tanglad (lemon grass) for stuffing (since its hard to find tanglad in the US, try substituting it w/ sibuyas dahunan and mint
1 teaspoon ground black pepper
2 tbsp oil
salt

Directions:
Marinate the whole chicken in soy sauce, calamansi juice, minced garlic, chopped onions, ginger, soda, sugar and pepper. Let stand marinate in the refrigerator for 1 hr.
Preheat oven to 325 degrees.
Stuff the chicken cavity with tanglad (lemon grass). Add the substitute herbs if there's no tanglad available.
Rub salt and oil all over chicken.
Dump the whole marinate mix inside the chicken.
Cook chicken for 1hr & 20mins or until golden brown. (I cooked mine until the pop up timer comes out)

In Anticipation of an Enchanting Summer Adventure

Our summer journey continues as we head on to another weekend getaway in Little Rock, the capital city of Arkansas. Officially known as "The Natural State", Arkansas is known throughout the country for its natural beauty and abundance of natural wildlife. This summer, we would allow ourselves to be swept by the natural beauty of the historical Petit Jean Mountain and we would quench the summer heat by hitting the state's largest water park, Wild River Country. In all of our trips, I usually love to plan ahead by researching online. Jeff commends me for organizing our travel stuff like maps and directions to the place and the list of things that we can do. Well, everything's been made easier and friendlier with the internet as your tool. Let's talk a little about these two places.

This picture that I found over the internet is the "Stout's Point", which is in the eastern tip of Petit Jean Mountain. A board walk has been constructed for the people who would like to marvel at the grand view of the Arkansas River Valley to the north and various mountains to the south. Nearby is the gravesite of Petit Jean (Adrienne Dumont), who according to the legend of Petit Jean, is a French girl who disguised herself as a cabin boy so as to secretly accompany her sweetheart, Chavet, a young French nobleman, who lived during the period of the French exploration of the New World. Knowing the hardships and danger on the journey, young Chavet of course didn't let Adrienne go with him and so she dressed herself like a boy so he can't recognize her and called herself Jean but the sailors called her Petit Jean which is French for Little John. Unfortunately, she was terribly ill while they stayed in the mountains, a few days before their voyage back to France. She eventually died with a request that she'd be carried back to the mountaintop and be buried at a spot overlooking the river below. Her legend and her death seemed to be what draws the people to this enchanting place.

The picture below is from the Wild River website. It is a wavepool which is just one of the exciting things you can find in the whole waterpark. I am excited to try their different slide attractions and the fun lazy river ride of course. I can't wait for July 4-6 to come. I'm sure this will be another fun and exciting weekend for me and my babe.

In the Midst of a Tragedy


As you might already know, a devastating typhoon struck the central and northern Philippines over the weekend. It brought so much damage to the affected areas and great loss for the relatives of the victims of MV Princess of the Stars tragedy. I was glued on tv last night as I watched TV Patrol giving interviews to the few lucky survivors of the stricken ship. A male survivor recounts the horror they all went through on that fateful day. He said the waves were as huge as buildings, the winds were so strong and the rain was so heavy making everything so dark even if it was still noontime. He also said most of the passengers were in their lifevests but most of them were too scared to jump out into the water and leave the ship. The life rafts were of no use as they were tossed away because of the raging storm. When the captain announced that they'll have to leave the ship, the survivor said in his interview that a lot of passengers especially the children and the old ones were too afraid to do it.


While I was watching his interviews, I couldn't help but got teary-eyed. I can imagine the fright that these passengers have been feeling at that moment. My heart cries out for the relatives of the victims. It must have been so hard for them not knowing what happened to their missing loved ones. Sulpicio Lines issued an official statement that they will be giving financial assistance of 200,000 pesos/victim to the relatives. But is there an amount that could compensate to the loss of their families and loved ones? I don't think so. It might be painful to admit but we couldn't put the blame solely to the vessel's management and owners. In the midst of this, there's no point in pointing fingers on whose to blame. No one would want this to happen. As Filipinos, we can offer our sympathy and prayers to our countrymen so that they might get past this terrible life crisis.

Bits and Pieces over the Weekend

Another weekend has passed and it was such a breeze. It didn't feel like it was a 3-day weekend for me and Jeff. We would have wanted to spend a much longer time relaxing on the couch while we watch our favorite shows on tv or laying down in bed while we read our favorite book together. But as it is, he only got 3 days off from work every week. I enjoyed it somehow. I got to watch a lot of my favorite shows on tv.

Finally, I was able to get a chance to watch the new musical show of my favorite singer, Regine Velasquez entitled Songbird. They messed up a little bit with the schedule--I stay awake until 11:55 PM thinking that her show goes on air at that timeslot but apparently I was wrong 'coz they moved it to Saturday but they didn't update their tv guide. Anyway, this week she sang Barry Manilow songs and again I was fascinated by her voice and her renditions.


Have you heard about Robert Louis Stevenson's Treasure Island book? It's a classic adventure which was first published in 1883. Jeff had read it when he was a kid and we found a copy of it in a used bookstore here in our town and it's now in our nightstand. I enjoyed the first few chapters of it. However, some part of it was written in Old English and they talked about pirates and ships but Jeff helped me understand them.

On a different note, did you know that Pinoy Dream Academy Season 2 was launched last week? Yeng Constantino was the first winner of the said show. This season has so much talented voices to offer. I've watched their first Gala performance last Saturday and I must say that most of the contestants has the makings of a winner. I'm sure they will grow more and more better each week.

Speaking of voice talents, Pinoy Idol's Top 12 also performed last Saturday in a much bigger venue. I was impressed by their performances and most of them are good looking and really has the star quality. I feel so proud to be a Filipino because it's a given fact that Filipinos are known to be really great singers anywhere in the world. These singing shows of the two competing networks are the best place to hone young and promising singers in the country.


Obviously, I am a tv addict. Besides my Filipino shows, I also like to watch shows about Fashion and Style. TLC's What Not To Wear truly interests me. I've watched 3 episodes this week and I find it fun. It's the US version of the BBC America makeover series where the lucky participants will be given $5,000 worth of credit card that they will use to shop for an updated set of wardrobes. It's not as boring as it may sound. Believe it or not, not all people like changes. I've seen participants whine and complain when it's time for them to head to New York and shop. I thought to myself, what's there to be upset about! I mean a chance to shop for clothes in New York and in effect makes you feel good about yourself. Anyway, the show is hosted by fashion gurus, Stacy London and Clinton Kelly.

FHM Sexiest Women Rivalry


Countless times, these two pretty ladies have been compared and pitted against each other. Both have top-rating tv shows in competing networks thus making the Marian Rivera vs. Angel Locsin rivalry much talked about. The media and the fans often debate about whose show rates more, who's prettier and sexier, who did this commercial first, who replaces whom in a particular endorsement, who's got more talent....the comparison is endless.

The supposed rivalry of Marian and Angel continues to be a heated topic as both were nominated for FHM's 100 Sexiest Women. Recently, the fans of Angel Locsin have reached the heights of their support for their favorite star in this rivalry by accusing FHM magazine of manipulating the voting results in favor of Marian Rivera. Currently, Ms. Marian holds the number 1 spot while Ms. Angel dropped to number 4 according to the partial and incomplete results of FHM.

Oh well, there's no telling as to where this rivalry reaches. But I personally think it's unfair for these women to be compared with each other. They are totally different persons and equally beautiful and talented. Healthy competition is fine but if it would personally affect them and the fans, I don't think it's worth it. It's best to just let them work and appreciate them both. The world is already full of hatred and animosity, we don't need our entertainment industry to join.

Magic and Illusions of Criss Angel

Most kids get fascinated with magic. I’ve seen kiddie birthday parties in the past that hired somebody to entertain the guests with fancy little tricks that play with our minds. Well, I shall say it’s not just kids but adults alike find magic and illusions entertaining. There have been very great magicians in the past but it seemed like the modern magician masters brought magical tricks a notch higher.

In our modern times, I think Criss Angel is one of the best illusionists there is. His acts and illusions are clever, weird, very entertaining and mind bending that if you watch him perform in his shows, you would be left spellbound and some would have even thought he has some real dark magic powers. But of course, he doesn’t have real dark powers, he’s just a very clever illusionist, but that is all he is.

I personally think that his tricks are pretty amazing. The best ones for me are when he levitates from one building to another, walks on water and when he was run over by a bulldozer on a bed of glass. Wow, that’s pretty neat, isn’t it? But I think the best thing is to watch him do his tricks live. Luxor Hotel and Casino in Las Vegas will hold a debut Cirque du Soleil performance called
CRISS ANGEL Believe. It’s gonna be a night of haunting journey inside the mind of this great mystifier Criss Angel. Sexual predators target children in chatrooms

I was browsing the tv channels this afternoon when my eyes caught channel E! True Hollywood Stories: THS Investigates. I don't usually watch this particular channel but after reading an article in a tv guide mag about Denise Richards' new show on that said channel, I suddenly got interested to check out some of their shows. Anyway, this episode of THS investigates talks about these 'male sickos' who likes to hit on children in the internet. They would enter in different chatrooms, look for young kids to chat with and eventually talk dirty with. A neighbor of a 12-year old girl who was talking to a 26-year old guy in a certain chatroom tells about how she pretended to be the young girl and talked to this guy until it eventually leads to the guy's showing himself off doing something inappropriate on webcam.

An organization called "Perverted-Justice" which was also mentioned in the show, exists to catch these sexual predators who usually use the internet to sexually abuse and prey upon children. They would post fake profiles about young kids in chatrooms and wait for these sexually disturbed individuals to contact them, to talk about sex and much worse to ask about meeting in a certain place. That's how they catch these sickos. I think it's just sickening to imagine that our young kids or younger siblings can be victims of these people. The cyberweb is so accessible even to kids nowadays, so it's really important to guide them and keep watch so they won't fall as preys into the hands of these perverts.

What's Up?

My weekend started great. I had 3 SS reservations and one of it was approved right away. Wow, I'm so happy! We're gonna take it slow this weekend. We won't do things outside our house since we're still recovering from our long trip to Illinois last week. I'll probably unpack today our stuff in the luggage so I can do laundry tomorrow. I miss Sunday school and church last week so definitely we would go this Sunday. Later today, me and Jeff will run to the post office to mail off some stuff for a friend in Kansas who's having a baby shower tomorrow, pictures for my family in PI and Jeff's uncle in Canada. That's pretty much will keep us busy this weekend. As I've said, we don't want to do much this weekend. But of course I'll keep on blogging. Anyway, have to go now. See yah!

I'm back from Illinois...

I'm back from our weekend summer getaway in Illinois. It was hot and humid there but it rained in the latter parts of the day. We got busy with Brennan's birthday last Saturday and we went to Deep River Waterpark to swim and have fun but unfortunately, we didn't get our money's worth 'coz in the early afternoon, there was a thunderstorm and a tornado warning so we had to leave the place early against our will. Instead of going straight home though, we dropped by a shopping center and did a little shopping.

We left Monday afternoon but on our way home, I saw Tanger Outlet Center in Tuscola, Illinois, right beside the interstate so I thought of stopping by and take a look. The stores include GAP, Old Navy, Bath & Body Works, Lee, Hush Puppies, Coach, Carters, Oshkosh B'Gosh, NIKE, Polo Ralph Lauren and a whole lot of good brands. The best part of outlet shopping is that their prices are way more cheaper than in the retail stores. I had a great bargain with the stuff that I bought. You wouldn't find a $10.00 Lee and Wrangler pair of jeans in retail stores, would you?

Anyway, I'm glad that we got home safe Tuesday afternoon. It was a 13-hour drive each way with a few stopover to eat and use the restroom, so we had to stay in a hotel back and forth to get some sleep. Sure, it was exhausting especially for Jeff 'coz he did most of the driving but we still enjoyed it. I took a lot of photos and I'm gonna share that to you in my next post. I missed 5 reservations from Social Spark while I was in Illinois but now I'm back and I can have all the time in the world to catch up with blogging. Happy Wednesday everyone!!!

Short Vacation in Illinois

Am I excited? Oh yeah...I started packing our stuff yesterday. I'm not quite done yet but the major packing was taken cared of. We would leave this afternoon when Jeff comes home from work. I want us to travel light but since we're staying there for 4 days, I'll have to make sure we have enough clothes and undies packed in the luggage. I've always find it fun to plan and organize the things to bring and do on a trip. Most importantly, I like to travel to different places and explore new things. Well, this is gonna be like my 3rd trip to Illinois but we try to do different things in every visit. This time we're looking forward to a good weather on Sunday so we can go to the Deep River WaterPark in Indiana, just an hour away from Bradley and take a plunge. My sister and I are going to have all girls' bonding as we're gonna survey the shopping centers in Orland Park. I'm down to my last bottle of Efficascent Oil so we would also visit the Filipino store in Bolingbrook. Yeah, I always need my Efficascent and it's a shame that it's not sold here in our place. Need to end it here guys, I had to continue packing our stuff. Ciao!!!

Own Domain and Blog Clean-up

After a little contemplation, I bought my own domain the other day. Some of my blogger friends told me that it's normally gonna take days before I can use it but at least now I'm taking a leap in this blogging hobby of mine.

In preparation for my new domain, I thought about adopting a new blog template and so I browsed through a number of free templates online yesterday. There were quite a few that I liked--a 3-column template is the first thing that I was really looking for. As soon as I'll get my new domain, I'll shift to the new template. I also got busy yesterday fixing my blog categories. It used to be in such a clutter. I think it's a little better after I made some changes with them. I'm happy with it so far.

Today, I am going to take care of my blog roll list. I've read some bloggers here cleaning up their list and deleting those links that didn't have the courtesy to link them back. I mean, they're quite right, what's the point of keeping the links if you're not linked by them anyway? It's just gonna take your blog forever to load. So, I decided to clean it up today. If I still have time, I'm also gonna do my blog hopping rounds since I haven't done it in days now. Enjoy blogging everyone...

Food Trip

Last week was a crazy diet for me. To help myself in achieving my goal to lose weight, I tried to eat less rice and small portions of food. I eat salad with a fruit or turkey sandwich with cheese for lunch and rice with meat for dinner. But last Memorial Weekend was a break when it comes to food that I ate. We did grill a lot. From steak, back ribs and country-style pork ribs. I tried different ways of marinating the meat. I even followed one suggestion of my friend Lou. All styles proved to be yummy and mouth-watering. I enjoyed the food so much.
